💥Vietnamese Mint Coconut Fried Rice💥 {Follow @foodliife _ for more recipes} The fragrant from the Vietnamese mint and the eclipse of the coconut milk just adding more flavour into to the fried rice. If you’re a fan of fried rice, I think you’ll love this one😋🤗 . RECIPE 👇 INGREDIENTS: 1 handful Vietnamese mint, chopped 1/2 cups green beans, chopped 1/2 cup carrot, diced 4 clove garlics, minced 1 onion,diced 1 or 2 chillies pepper 1 tsp ground ginger 2 tbsp soy sauce 1 tbsp sesame oil 1 tbsp sesame seed 1/2 tsp dark soy sauce(optional) Salt and pepper for seasoning 2 tbsp coconut oil 1 cup coconut rice . ➡Coconut rice cook method: 1 cup basmati rice 1 1/2 cups water 1/2 cup coconut milk Rinse and drain the rice. Combine the rice, coconut milk and water in a medium saucepan, stir well. Place over on a high heat and bring it to boil, once it’s boil reduce to low heat . Continue to cook about 15 minutes, fluff with fork and let it cool completely before the next cooking. (You can cook it a day earlier too) ➡️Heat the coconut oil in a large wok or deep skillet over medium heat. Add the garlic and onion, sauté till fragrant. ➡Add the Chilli pepper, carrots and green beans, sauté till the veggies are soft. . ➡Stir in the cooked fried rice, soy sauce, ground ginger, thick soy sauce, sesame oil, sesame seed, seasoning and Vietnamese mint. ➡Finally cook and toss for another 2 minutes. Remove from the heat and serve warm.
