Mexican inspired beef chilli. My husband are big fans of burrito bowls. This combination of beef, Mexican spices from @spiceandcomerchants with black beans served with rice, fresh guacamole and fresh coriander is brilliant! And quick to prepare if you’re cooking inbetween naps like I have been hehe. RECIPE: 500g organic beef mince @cleaversorganicmeat Olive oil. 1 brown onion - diced 3 cloves fresh garlic. 2 carrots - diced. 3 stalks celery - diced. 1 red capsicum - diced. 2 TBSP @spiceandcomerchants Mexican spice mix. 400g black beans. 400g crushed tomato. 1 cup of water. Salt and pepper to taste. Combine olive oil, onion and garlic over medium heat at sauté for approximately 2 minutes. Add the celery, carrots and capsicum and stir through. Add the spice mix and stir well incorporating it with the vegetables to cook the spices slightly. Add the beef and break apart with wooden spoon till fully cooked. Add black beans, crushed tomatoes and water. Stir through and turn heat down to medium heat and allow it to gently simmer with the lid on until the liquid reduces, approximately 20-30 mins. Check for seasoning and adjust if needed. Ensure you stir occasionally throughout the cooking process.
