Not going to lie. We ate Portokalopita (Orange filo pie cake) for breakfast and dessert more that a few times when travelling around Greece in 2018. I made this for dessert afew nights ago and it was more than approved by my parents and in-laws. Enough talk... here’s the recipe😋. 400g filo pastry. 400g Greek yogurt. 3/4 cup olive oil. 5-6 eggs - beaten. 2 Tbsp orange zest. 120ml fresh orange juice. 80g caster sugar. 2 Tbsp orange blossom water. 1 Tbsp baking powder. A pinch of salt. SYRUP. 1 cup fresh orange juice. A slice orange zest. 1 cinnamon quill. 1cup of water. 3/4 cup caster sugar. METHOD: Begin with making the syrup to ensure it’s cool when pouring it over the hot cake. Combine all ingredients into a small pot over medium heat and allow it to boil until it reaches a syrup consistency, approximately 15 minutes. Grease a 12 or 14 inch baking tray with a little butter or olive oil and grab singular sheets of filo pastry scrunching them and arranging them into the tray (no need to be neat here). Once filo has dried out, combine all other ingredients onto a bowl and whisk well together to combine. Pour this mixture over the filo pastry and transfer to oven at 170C until golden and a skewer comes out clean. As soon as the cake has been removed from the oven. Use the skewer to poke multiple holes into the cake and pour the cooled syrup on top. Allow the cake to sit and absorb and serve at room temperate with crème chantilly or vanilla ice cream.
