🌿My Curried Butternut Squash Mac and Cheese with Garlicky Rapini Got quite the attention so as promised I’m giving you the recipe. I’m also throwing this up on my blog for future use cause it’s just awesome. The creamy factor of the pasta and the spicy bitterness of the rapini is so on point (if ya like that sort of thing😋) I wish you all could taste just how creamy and delicious this was, so if you make it, please let me know! The rapini is so easy but I’ll give you the deets all the same 1️⃣wash and trim bunch of rapini 2️⃣heat tbsp of oil over medium high heat, add 1/2tsp chilli flakes and 2 cloves minced garlic3️⃣add rapini, sauté for a couple minutes, reduce heat to med-low and cover with lid for a few minutes until al dente. I like my rapini with a little bite.4️⃣season with salt and pepper .. Curried MAC n Cheese🧀 2c curry spiced roasted butternut squash 2c plantbased milk 1/2c soaked and drained cashews 1/2c @earth _choice cheddar strands 1tbsp curry powder 1tsp turmeric powder 2tbsp nutritional yeast Salt pepper Chilli flakes 1/2c frozen peas 1/2c reserved pasta water Reserve 3/4c roasted butternut squash. Place 1 1/4c squash, cashews, milk, cheese, nooch, curry, turmeric in blender and blend until smooth. Season with salt and pepper. Boil pasta and reserve 3/4c pasta water. Drain and rinse pasta. Add 1tbsp olive oil to pasta pot. Place reserved squash in pot, add-in peas, pasta and cheese sauce. Add-in reserve pasta water to thin and make super creamy, shiny and smooth. Season with more salt, pepper and chilli flakes and serve with garlicky rapini.
