Kimchi fried rice and steamed bokchoy is what’s for dinner. Our kimchi graduated from cupboard to fridge last week and MAN is it gooooood. Today it SNOWED and hailed and was windy af here so I was craving spice and carbs=kimchi fried rice💥 FRIED RICE🥢🥡 -1/2 onion diced -10 shiitake mushrooms sliced -10 garlic scapes washed and trimmed -1 1/2 cup cooked brown rice -1tbsp tamari -2tbsp rice vinegar -2tbsp kimchi juice -2tbsp gochujang sauce -1tbsp sriracha -1 1/2cup chopped kimchi -2cups baby spinach -1 green onion sliced -bok choy -sesame seeds 1️⃣saute onion and mushroom, add kimchi and sauté for 2 min. 2️⃣Whisk sauce ingredients and add to pan with rice, stir to coat and cook for few minutes3️⃣Add garlic scapes and spinach, folding into rice mix. 4️⃣In separate pan heat tbsp of sesame oil and olive oil and add bok choy. Season with salt and sprinkle with sesame seeds.5️⃣while all this is happening cut 1/2 a block of tofu into cubes, coat with olive oil salt and pepper.
