Quick Salad tip, make sure you season your salad for optimal taste. Use dried and fresh herbs, garlic powder and some salt and pepper to taste. Salad: 1 head of romaine, chopped into bite size pieces 10 cherry tomatoes, halved 1/4 red onion, finely diced 1 mini cucumber, sliced into coins 1 roasted beet, diced 5 sprigs oft cilantro with stems, finely minced 1/4 tsp of salt 1/2 tsp dried oregano 1/4 tsp of garlic powder 1/8 tsp black pepper Dressing recipe Chickpea recipe Smoky Roasted Chickpeas: 1 can chickpeas, rinsed, drained and patted dry with a clean towel 1 tsp tahini 1/2 tsp smoked paprika 2 tsp soy sauce 1/4 tsp sazón Dressing: 2 tbsp tahini Juice of 1 lemon I tbsp maple syrup 2 tsp soy sauce 1 tsp garlic chili sauce or 1/4 tsp garlic powder 1 tsp mustard 2-3 tbsp water Whisk dressing ingredients together except water. Once combined, slowly add water and whisk together until desired consistency is achieved. For chickpeas, set oven to 425F and toss ingredients together and lay out on a baking sheet. Roast for 20-25 minutes. Remove and allow to cool. Once all ingredients are prepped, add all ingredients to a medium sized bowl and lightly toss together until dressing coats salad completely. Serve as a side or combine with some starch to make it a complete meal (quinoa would be great here). ✓By @plantbasedrd 🖤
