Butternut squash is getting reinvented in my fall recipes both sweet and savoury. Pumpkin season is technically not here yet so until it is, squash will get the spotlight😊Happy Thursday people!! Butternut Squash Mac and Cheese 2 cups roasted cubed butternut squash 1/2 white onion 2 cloves garlic 1/2 tsp turmeric 1 tsp curry powder 1/2 cup raw cashews soaked overnight Pinch salt and cracked pepper 1 tsp Dijon 2tbsp nutritional yeast 1 cup cashew milk 1-1 1/2 cup pasta water Short noodle of choice METHOD Bring pot of salted water to a boil. Cook pasta according to package. Heat olive oil in a pan and sauté garlic and onion. Remove from heat. In a high speed blender place cooked garlic onion, squash, turmeric, curry powder, nutritional yeast, cashews, Dijon, cashew milk, salt and pepper. Blend until smooth. Start adding in hot pasta water until sauce reaches desired consistency. Place cooked pasta back into pot and pour sauce over pasta. Stir to combine. Season with chilli flakes, Maldon salt, cracked pepper and fried sage. In a small pan heat oil over medium heat. Fry sage for 1-2 minutes, flip and fry for 30 more seconds.
