I made my Banana Walnut Oats for breakfast this week and boy are they good!! This is a perfect weekend breakfast, afternoon snack or cut up into wedges as a snack on the go! I added coconut kefir, my granola and some blues for a pop of brightness. Happy Saturday everyone!!! BANANA BAKED OATS 1 flax egg 1 mashed banana 1 tsp baking powder 1 heaping tsp cinnamon 1/2 tsp nutmeg 1/2 tsp salt 1 tsp vanilla 2 tbsp melted coconut oil 1/2 cup chopped walnuts 2 cups gf oats 1/4 cup maple syrup 1 3/4 cup cashew milk 1 banana Homemade granola or store bought Yogurt or kefir METHOD Preheat oven to 375. Grease a 8/8 or desired baking dish. In large measuring cup prepare flax egg and set aside. Mash banana into flax and add baking powder, spices, salt, vanilla and coconut oil and stir together. Add in walnuts, oats, maple syrup and cashew milk. Pour oat mixture into pan and place sliced banana on top.
