Looking for an easy peasy dinner for tonight? As long as you have rice and some sort of semblance of vegetable in your fridge/freezer, this is doable. I had frozen corn, peas, shrooms, cabbage, cilantro and tofu so that’s what went in. I love roasting the tofu first, it adds texture and crispyness (word🤷‍♀️). I also drenched it in sriracha cause that’s how I do💥 FRIED RICE 1 cup brown rice well rinsed 12 cups boiling water Bring the water to boil and add rice. Cook for 30 minutes uncovered. Drain, add back to pot and cover for 10 minutes. Perfect rice every time. Sauté veggies in a large pan or wok.
