I made lentil meatballs and they are even BETTER than last time🥳I am not a nutritionist but I do know that lentils are a powerhouse of protein and fibre. If you want more info I’m sure one of your nutrition buddies here will help ya😂 I had leftover lentils from making my balls so into my homemade sauce they went. Kale did too. A thing of beauty my friends AND took like no time to prepare as the balls were already done. The power of prep to the rescue🍝 LENTIL NEATBALLS 2 tbsp olive oil Pinch chili flakes 3 cloves garlic, minced 1/2 chopped onion, diced 2tbsp tomato paste 1 1/2 c cooked green lentils 1 1/2 c sliced cremini mushrooms 1/4c vegan parm 1/3-1/2c gf panko 1 1/2tbsp Italian seasoning 1/2 c fresh cilantro 1tsp salt Cracked pepper 1/2tsp dried chilies Sauté onion, garlic, pinch chili flakes. Add in shrooms and sauté until they soften. Add mushroom mix to food processor with remaining ingredients. Pulse until mixture comes together. Transfer to a bowl and place in fridge to firm up. About 30 minutes. Preheat oven to 400. Line a sheet with parchment. Roll balls about 1 1/2-2 inches (mine were pretty big) and place of sheet. Bake for 20 minutes, turn and bake again for 10. Balls should be firm and crisp on the outside and still tender and juicy on the inside. SAVE TO MAKE!
