Smoked Salmon Rainbow Nourish Bowl 🌱🫐🥒🍅✨ Eat the rainbow by throwing together different fruit & veg in all shades 🌈 topped with a protein source (salmon, egg, tofu, beans, tempeh etc.) and a simple, tasty dressing! There are a few ingredients in the list, but you’re welcome to make substitutions based on what you’ve got in the fridge and cupboard. Here’s how to make this bowl 👇 INGREDIENTS (makes 1-2 serves): — 1 cup mixed leafy greens — 1/2 cup sliced cherry tomatoes — 1/5 cup red onion, sliced — Sprinkle of alfalfa sprouts — Handful of blueberries — 1/4 cucumber, chopped — 1/4 avocado, sliced — 1 hard boiled egg, halved (optional) — 40-50g smoked salmon (can sub tofu/tempeh/edamame) — Dressing: mix juice of half a lemon + equivalent amount extra virgin olive oil in 50:50 ratio. Add a pinch of salt and pepper. METHOD: Assemble greens in a bowl. Arrange the rest of the ingredients in sections on top. Drizzle the lemon & olive oil dressing over the top.
