Happy 🌍🌏 Day everyone! Can’t think of a better way to celebrate than inhaling a big plate of Spahetti al Limone with Wild Ramps, Asparagus and King Oyster Mushroom “Scallops”. To👏🏼Die👏🏼For. Never heard of Ramps? They are in season right now and belong to the allium family. Ramps are wild leeks and look like a super slender leafy green onion. Chefs go bonkers for them and for good reason. They don’t last long and they are deeeeelish! Spaghetti al Limone🍋 1 package of spaghetti 3/4c pasta water Salt 2+tbsp olive oil Pinch chili flakes 1 lemon juiced 1big clove garlic minced 4 king oyster mushrooms (cut stems into scallop shape and scored on top. Reserve cap and slice) 10ish ramps 6 asparagus spears cut in small pieces Handful baby spinach Sprouts Vegan parm Cook pasta unsalted water. Reserve a cup of water. Heat oil in pan over medium high heat. Sear “scallops” on both sides, salt with salt and pepper and set aside. Add more oil to pan, cook garlic, add asparagus. Toss in sliced mushrooms and ramps. Add a splash or two of hot pasta water. Season with salt and pepper. Add spinach and cooked pasta, lemon juice, more pasta water, vegan cheese and toss to combine. Season with more salt and pepper. Transfer to a serving dish and place seared mushroom scallops on top, one healthy drizzle of olive oil, sprouts and serve!! #kingoystermushroom #cleanfood #veganrecipe #veganscallops
