Taco Tuesday with a Spring twist!! Ever try falafel in your tacos? Well if the answer is no, drop tonight’s meal plan and make these for dinner tonight! I jazzed up these falafels with fresh mint and sautéed garlicky mushrooms and asparagus to add to the filling. The result was just lovely and Springy🌱Tacos aren’t complete without a sauce so I made my TAHINI SRIRACHA sauce to elevate these tacos even more. Falafel 398 ml chickpeas rinsed and pat dry 2 cloves garlic 2 tbsp tahini 1/4 cup fresh mint 3 tbsp lemon juice 2 tbsp chickpea flour 1 tsp cumin 1/2 tsp salt 1/4 tsp paprika Place all ingredients in a food processor and pulse to combine Preheat to 400. Bake for 20 minutes, then and bake again for 10 more. Makes 12 small falafel. TAHINI SRIRACHA 1/2 cup runny tahini 1/2 lemon juiced 1 clove garlic finely minced 1/2 tsp salt 1 tbsp sriracha Water to thin >mix everything in a small bowl.
