Made this easy bowl with a base of tomato rice, shrimp sautéed in butter and then topped with red pepper and lime, lime-marinated onions, cherry tomatoes, and avocado. Fresh and filling!! I made the tomato rice in my @crockpot on the pressure cook setting (I have one that’s basically like an Instant Pot). I sautéed 1/2 cup chopped onions in 1 tbsp olive oil for about 4 min and then added in 2 cloves chopped garlic. Added 1 cup of brown rice (for 2 ppl) 1 1/2 cups water, 2 tbsp tomato paste, and 1/2 tsp cumin and pressure cooked for 20 minutes, then released after 10. I noticed online there are a lot of cuisines that traditionally use tomato rice — Mexican, Persian, Indian. I made this one fairly simple, so I’m not sure what it’s closest too, but I’m looking forward to making more types of tomato rice with some more specific flavors! To make marinated onions, just slice onions into half moons, add to a bowl, and squeeze lime over it. Add a sprinkle of salt, and massage with your hands! Let sit for ~10 min..
